Christmas Leftovers Cookbook: Dinner & Dessert Menu

Dinner & Dessert Menu

Sunday 27th December 

 

Dinner

Turkey & orange stir fry (For 2)

Leftovers: turkey

Total spent: £1.30

 

 

Ingredients

  • 400g roast turkey - Leftover
  • 1 red pepper - 20p
  • 1 orange - leftovers
  • Thyme
  • 3 spring onions -10p
  • 250g chestnut mushrooms - £1
  • Dry garlic
  • Chili flakes
  • Black & green olives - leftovers
  • Butter

 

 

Method

 

 

  1. Pull the meat off the bone, set aside and discard the bone.
  2. Rinse and roughly chop: pepper, spring onion, mushroom and garlic. Only keep the mushroom separated from the rest.
  3. Cut 4 big orange peels and also some slices of the fruit. Remove the peeps and add to the vegetables. Also rinse a handful of green and black olives, then add to the vegetables.
  4. In a large pan, heat the butter and add the orange peels to bring out the flavours (2 minutes).
  5. Add the thyme and Turkey then dry fry for 4 while continuously stirring.
  6. Now add the mushroom which will produce liquid to that, add chilli, salt, pepper, garlic, stir, then leave to simmer for 2 minutes uncovered, stir again leave for 2 minutes and allow the liquid to dry out.
  7. Now add spring onion, peppers, orange, olive stir adjust seasoning, then toss fry until the peppers soften.

Done. Serve with anything you want: bread, chips, potato duchess or potato dauphine. Enjoy

 

 

 

Dessert

Almond and Christmas pudding ice cream

Leftover - Christmas Pudding

Total spend: 70p

 

 

Ingredients

  • 100 cognac Christmas pudding – Leftover
  • 100g Brown sugar
  • 300ml whole milk
  • 100 ground almond - 70p
  • Almond flakes for topping

 

Method

 

 

  1. Leave the Christmas pudding at room temperature so it won’t be hard to mash.
  2. Add the sugar to the milk and stir until there are granules left.
  3. Pour the sugar/milk mix in the blender with the mashed Christmas pudding and blend until smooth.
  4. Now add the ground almonds and blend again…the smoother the better.
  5. Once you are satisfied with the smoothness of the ice-cream mix, pour it in a bowl with a lid and place it in the freezer for 3 hours.
  6. Bring the bowl out of the freeze 10 minute before scooping.
